Kheer in Bengali is called ‘payesh’. This is a dessert that mostly happens during birthday celebrations. If any family member has their birthday during winter, then the lucky one gets the payesh prepared with gur. In case of nolen gurer payesh, the taste, aroma and feel are much different than usual white kheer. This one is heavy to tuck in.
