Classic mutton biryani:

This biryani is cooked in a method similar to its chicken counterpart, with the exception that, instead of the chicken chunks, either lamb or mutton are sautéed in the spices. The mutton biryani is generally the more preferred dish.

Hyderabadi biryani:

Brought to the Deccan by the Nawabs, it is the most famous South Indian biryani. A challenging dish, the intriguing part is cooking the rice. Cooked in layers, unlike most other types of biryani, a lot of coconut and saffron is used in the preparation. The rice itself is the hero of the dish, overshadowing the meat.
