Biryani: The Indian Foodie's First Love!


Lucknowi Biryani:

This biryani is based on the Persian style of cooking and uses minimal amount of spice. The signature dish of Lucknow, it is cooked using a method called Dum pukht where, the gravy and the meat are partially cooked and layered on the rice and served in a sealed dish.

Malabar Biryani:

Famous in the Kozhikode, Thalassery and Malappuram areas of Kerala, this dish is made from a special type of rice called khyma rice, along with rich mixture of spices, cashews and raisins. This biryani stands out from other biryani in the method of preparation and serving. The rice and the masala or gravy is prepared separately and mixed while dining.
