Yan Wo
Yan Wo soups are one of expensive dishes in the world. It is made from a swallow-like bird called Swiftlet, which produces its nest using its own saliva secretions and solidifies into a sticky matter in the open air. Yan Wo is called as the ‘caviar of the east’ and the nests are made for the purpose of raising the young and abandoned. It is used in soups, tonics, desserts and more. In the soup, it turns into a jelly or jelly-like mass.
It is said that during 2000s, there were an estimated 1,000 swiftlet farms which has grown to around 60,000 now. The edible bird’s nests are sold at prices up to about $3,000 per pound. Besides, the Chinese people believe that it provides good health for the skin.
