Kuchikami No Sake

This rice-based alcohol is often called as ‘rice wine’ and the rice is usually made when someone ideally a virginal girl chews cooked rice and then spits the resulting liquid into a container. The mixture is then left to ferment and with the enzymes from the chewer’s saliva produces the alcohol. This solid, sake paste can also be eaten and has an opaque, whitish color that tastes sour. Sometimes referred to as ‘Mouth-Chewed Sake’, this special sake is also called as ‘Kuchikami No Sake’.
