The Extravagant Goan Cuisine to Die for!

Balchão

Balchão is a method of cooking rather than a dish. The meat used here is fish, prawns or pork and is cooked in a tangy tomato-chili sauce. The process resembles pickling and this too is derived from a Portuguese cuisine. The other ingredients that add flavor to the dish include a paste made from dried shrimp known as galmbo and a dash of feni.

Bebinca

Also called as bibik or bebinka, it is a traditional Goan dessert. The pudding, which was a famous delicacy in Portugal and Mozambique, consists of seven layers and it is prepared using flour, sugar, ghee, egg yolk and coconut milk. The dish is usually prepared during Christmas and can either be consumed fresh or preserved. People also tend to take it with plain vanilla ice cream.
