Chicken Cafreal

The cafreal arrived in Goa from the Portuguese colonies in Africa. The ingredients include coriander leaves, garlic, onions, ginger, cinnamon, pepper, chili, mace, clove powder and lime juice. It is a dry dish rather than a gravy one and it can either be fried or roasted, based on preference. The dish is usually accompanied with lime and potato wedges.

Vindaloo

Vindaloo is a fiery curry which can be prepared using pork, chicken, lamb, prawns or mushrooms, although pork is usually the meat of choice. The original Portuguese version of the dish was cooked using the pork that was marinated in garlic and red wine. The goan chefs replaced the wine with vinegar and added dried red chilies and other spices to it. The unique taste of the dish comes from the pork fat which combines with all the spices and the vinegar, making it really spicy.
