Iran, Turkey and China share “Pishmaniye” - a candy tradition in floss halva - a mixture of sugar and maltose that gets hand-stretched until it turns unto fine strands. Literally translating into “regret fullness”, the Far East version of the candy sounds much better (and is easier to pronounce) - Icy Crispy Dragon Beard Candy. A box of it contains over 8,000 strands of sugar and maltose, hand-stretched and then enfolded around coconuts, peanuts, or sesame seeds. The dragon beard reminds you of the old-world cotton candy but a little less sweet. You can find a box of it anywhere in Hong Kong.
