Tarte Tatin
Pastry
Flour 1/2 C + 1 tbsp
Butter 1/2 C
Powdered sugar 1 tbsp
Yolk 1
Water
Rub in butter to flour till it resembles bread crumbs.
Add rest and knead lightly to a form dough. Cover and keep it in the fridge for 10 minutes.
Roll it into a thin sheet.
Filling
Butter 2 1/2 tbsp
Powdered sugar 1/2 c
Water 1 tbsp
Apples 3 thickly sliced
Lime juice
Heat sugar water and butter in a 7inch cake pan on low heat till sugar caramelize. Toss the apples with lime juice. Arrange it over the caramel. Cover the apples with the pastry and bake it in a pre heated oven at 225 degree for 40 minutes. Stand it for 10 minutes and invert onto a serving dish.
