Ishaara, a renowned restaurant celebrated for its ingredient-focused culinary philosophy, is excited to present "Undivided Punjab," an exclusive food collaboration with Chef Sherry, starting 20th September. This unique culinary experience will honor the rich heritage of Punjab, showcasing forgotten recipes, traditional cooking techniques, and the diverse flavors from both sides of the border that once defined the region.
A tribute to the undivided region's culinary legacy, "Undivided Punjab" is more than just a menu; it is a nostalgic glimpse into the cultural and emotional ties that continue to bind the two Punjabs despite geopolitical separation. This culinary journey is also a way to evoke memories of ancestral kitchens and recipes passed down through generations, celebrating the food that was once shared by families across the border.
Chef Sherry, who has deep-rooted connections with Punjab, aims to tap into this nostalgia, bringing dishes to life that reflect his own family’s stories and culinary traditions. "For me, this menu isn’t just food on a plate—it’s a way to connect to the soul of Punjab, to the flavors I grew up with, and to pay homage to the ancestral recipes that many have forgotten," says Chef Sherry. Through a thoughtfully curated selection of dishes, diners will embark on a journey through time, experiencing the rich traditions and heartfelt stories behind the flavors of Punjab”, she adds.
The “Undivided Punjab" menu offers a variety of exceptional vegetarian and non-vegetarian dishes, many of which carry a forgotten legacy. Some standout dishes include:
Karachi Fry Kebab – A rich, spiced minced meat kebab slow-cooked with 32 spices, representing the depth of flavor found in the region’s traditional kitchens.
Charsi Tikka – Smoky and tender, this char-grilled mutton boti is cooked in its own fat, a technique that intensifies its flavors.
Quetta Special Rosh – Lamb shanks slow-cooked for hours in the dum cooking style, bringing out the dish’s rich, bold flavors.
Zamindoz Shikampuri – A vegetarian kebab stuffed with Aam da Murabba, a tribute to Punjab’s underground vegetables and classic preparations.
Ludhiana Ka Safed Murgh Makhani – The original white butter chicken, a creamy, slow-cooked delight from the streets of Ludhiana.
Kachi Haldi Ki Pinni, an indulgent dessert made with raw turmeric and dry fruits - a sweet reminder of the traditional celebratory treats made in ancestral homes.
Completing the culinary journey, the menu also includes authentic accompaniments such as the probiotic Kaanji drink, Amritsari Papad, varied Achaars & Chutneys.
“We are thrilled to collaborate with Chef Sherry to bring this unique menu to life," says Prashant Issar, Director, Bellona Hospitality Services Limited. "This is more than just a culinary experience — it’s about connecting our guests to the essence of Punjab through flavors, culture, and history. Every dish tells a story, and we’re excited to share these stories with our diners."
At the heart of "Undivided Punjab" is a commitment to using the highest quality, native ingredients such as anardana (pomegranate seeds), jamun (black plum), and kacchi haldi (raw turmeric). Combined with traditional techniques like slow cooking and grinding spices by hand, these elements ensure the dishes stay true to their roots, offering diners an authentic taste of Punjab’s past.
Whether you’re a food lover eager to explore forgotten recipes or simply looking for an unforgettable dining experience, "Undivided Punjab" at Ishaara promises to be a celebration of culinary heritage and a nostalgic tribute to the flavors of our ancestors.
