Delicious, healthy and great source of nutrients, apple dishes can make your party the talk of the town. Apple is a popular fruit that belongs to Rosaceae family. Apples contain many essential vitamins, minarals, fiber and hence good for health. Apples are eaten raw, used in salads and baking pies, tarts, cakes. Apple juice is a popular cold drink. Apple cider viniger is used in salads and cooking. In India Himachal Pradesh is the major apple growing area. The popular varities of Apples available in Indian market are Himachal, Red Delicious, Fuji, Gala, Granny Smith etc. Himachal apples are pinkish colour apples with darker reddish stripes; they are sweet and crispy, excellent for eating, salads and baking. Red Delicious apple is deep red in colour, mild flavour; the flesh is juicy with very light crispness, the skin is tough and bitter, excellent for eating and apple juice. The Fuji is light pink colour apples originating from Japan. This apple is very crisp with a distinct acidic flavour, excellent for salads. Gala apple has pinkish stripes over a yellow background. These sweet apples are excellent for snacking, salads and sauces. Granny Smith apples are light green colour, these apples are quiet tart excellent for pies, tarts and salads. Flour 275 g Baking powder 2 tsp Salt 1/4 tsp Cinnamon powder 1/4tsp Clove powder 1/8 tsp Butter 3/4 C Powdered sugar 250 g Eggs 3 Lime rind of 2 limes Vanilla essence 1/2 tsp Rum 4 tbsp Apples 3 Sift flour, baking powder, salt, cinnamon and clove powder. Beat butter and sugar till smooth. Add eggs one by one. Add lime rind and vanilla essence. Beat well Fold in little flour , rum and 1 chopped apple. Cut 2 apples into 4 and core it. Make slits on the apples without touching the base. Pour into a greased 8 inch pan, arrange apples on top. Sprinkle cinnamon and powdered sugar over the apples and bake in a pre heated oven at 180 degree for 1 hour. Cover with aluminum foil in the last 15 minutes to avoid over browning.
