At the age of 40, Harland was running a service station in Kentucky where he would cook chicken dishes and other meals for people. He opened a restaurant across the street, but closed it in 1952, and devoted himself to franchising his chicken business. He travelled across the country and prepared chicken from restaurant to restaurant, striking deals that paid him a nickel for every chicken sold. Later, in 1964, he sold his interest in the company for $2 million to a group of investors.
