Book review
Rakesh (Rocky) Mohan, prominent liquor baron and executive director of the Mohan Meakins group, belongs to a family of pioneers and achievers. He is a passionate ‘foodie’ who traces his interest in Indian cuisine to his paternal roots in Rawalpindi (now Pakistan) where it is traditional for men to cook. With a serious interest in cooking, Mr Mohan started documenting Indian recipes more than a decade ago and this book is a labour of love he shares with food enthusiasts all over the world.
Lavishly illustrated, this book gives lucid and simple instructions for cooking in various traditional styles such as dum, baghar and dhungar (formerly the closely guarded secrets of gourmet cooks and speciality restaurants). It explains flavouring and smoking techniques, basic Indian recipes and how to make masalas at home—all possible with user-friendly gadgets and easy availability of ingredients. Mouth-watering recipes are within easy reach of a modern kitchen. Adapted into almost instant ‘gourmet’ fare each recipe is a celebration of delight on your table.
